Delicious Butterscotch Sauce
2 Cups Dark Brown Sugar (you can use light, as I have pictured here, but dark is so much richer!)
1 Cup Heavy Whipping Cream (Straus is our favorite brand- organic and no additives)
8 tbs Salted Butter
Sprinkle of Sea Salt (to taste)
Splash of Vanilla (to taste)
Mix sugar, cream, butter and salt in medium/large saucepan and place over medium heat. Heat and whisk gently until butter melts, and ingredients melt together and combine nicely. Continue heating for about 8 minutes. Mixture will boil softly and gradually thicken. Stir gently as mixture cooks. The longer you cook it, the thicker it will be. After 8 minutes or so, remove pot from heat and add vanilla, and extra sea salt if you like. Then return mixture back to heat and cook for another minute or so to further thicken. Remove from heat and allow to cool. The butterscotch will thicken even more as it cools. Enjoy it warm over ice-cream, and refrigerate the remainder for future indulgences.
For a special treat, I love a spoonful in my coffee in the morning. This photo shows how thick the butterscotch gets after refrigerating.
My kids love a delicious butterscotch sundae...or even better...a special sundae cone. Just layer melted chocolate, vanilla ice cream, butterscotch sauce, more chocolate, in a cone and sprinkle with nuts. Place cones in the freezer for a few minutes to harden up.
